About our Thekua

Thekua is the heart of every Chhath Puja kitchen in Bihar. Stone-ground whole wheat atta is kneaded with melted jaggery syrup, a whisper of green cardamom and fresh grated coconut, then pressed by hand into a carved wooden mould.

Instead of deep frying, we bake each batch slowly in small trays. The jaggery caramelises rather than burns, which is what gives it that deep amber colour and a crunch that holds for weeks without a single preservative.
